OK i known for along time that sony and nintendo and crap say that the buttons in the controler are "pressure sensitive" and stuff like that. that the harder you push the harder/faster/higher you go.

IS THIS TRUE????
if it is what games take advantage of this?

Yes it is.

Several games, for instance, in madden the harder you hit a button the more sever the player will react.  In hot shots golf, if you lightly depress the triangle you will zoom slowly to the ball, it is just minor things.  

In MGS2, if you raise your gun, but decide not to shoot and bring it down very slowly he will take his finger off the trigger and wont shoot.

pro evo soccer uses this, john madden does, the bouncer does, gt3 does, lots of others too

Super Smash Brothers (64) is a prime example, If you press it lightly you will do a lighter attack, if you smash it you will do a smash attack. I dont know about SSB:M though..

GT3 would be the best example.  Depending on how hard you hit the gas ( X button ) changes how fast you accelerate.

Well never really played GT3,, Im  probably gonnna get it for $19.99. I was wondering , is it fast paced (Rush 2049 style) or is like slow (just slow moving).

Umm, its a car simulater.  Definently not like Rush in any way.  Its different but very good.

so its based more life like? rather than extreme like?

Yes, its not extreme or arcade in any way.  Its 6 cars on a track racing.  With over 100 cars you can get.  Theres some 10 courses, some being courses in real life like Laguna Seca.

Not to pick hairs..but I think they are all real tracks except for that LONNNG testing track.
